I thought I’d start a short series of mini, single photo posts about food that we eat regularly.
Nothing fancy. Nothing complicated. Just everyday food that takes minutes to make and doesn’t need special equipment or ingredients.
These chocolate crispy cakes are a cheap packed lunch standby, or a last minute offering to the School Spring Fair.
Take 4 Mars Bars, chop them into small chunks and put them in a heavy bottomed saucepan. Add 3 tablespoons of butter and heat gently until nearly melted. Take care not to boil the mixture. Then beat out the last few lumps of nougat with a wooden spoon until the buttery chocolate goo comes together into a thick chocolate sauce.
Incidentally, this is amazing poured over ice cream ‘as is’.
Then just add lots of rice crispies, or cornflakes. I think about 4 oz, but no need to measure, just add and stir until they are all mixed in.
Spoon the mixture into fairy cake cases, or as I prefer into a 7″ square pan with a strip of baking parchment across the bottom to help you lift it out.
Chill briefly, then chop into chunks. Leave out until it all gets eaten, it won’t take long.
There’s no need to refrigerate these, or they will break your teeth.
Don’t forget to make more stuff.

My Ted would love these in his packed lunch although I suspect the preschool would send him home with a note telling me to only put “healthy food” in there. grrrr!

ha ha.. Matt and H just made some last night… the make them every other week or so.. its a special boys ritual… I’m not a fan of Mars bars but I do plan on making some coconut and almond bark later today.
