One last reasonably healthy recipe from me before the gluttony of Christmas descends. Ed created this black rice salad one lunch time which is greater than the sum of its parts.

I love beetroot. Back in the 70's when on holiday I used to fill my plate with purple vinegary slices because it was something I recognised. These candy striped Choggia roots take my beety love to a whole new level.
