This Weekend I made my first ever ice cream.
I spotted this pin on Pinterest entitled ‘The best chocolate ice cream you’ll ever have‘ and it led me to the fabulous Cup of Jo blog.
There are no eggs in this recipe and you don’t need an ice cream maker. It’s very easy and very, very rich because it’s pretty much an ice-cold ganache. Just a couple of spoonfuls is enough to satiate any chocolate craving.
I am going to play with the ingredients and cooking time and try this recipe again, because I think it needs a little work to make it perfect. I aim to make it softer and less fudgy…and with a little more coffee.
Coffee chocolate ice cream, like I had on our wedding day.
That’s the plan anyway. I’ll let you know how it goes!

You’d never know this was your first attempt at homemade ice cream. Amazing job. It looks so rich and creamy, and a bit like gelato. Love that it doesn’t need an ice cream maker too.

I definitely want to review the recipe before I post it, I think there must be an qty wrong somewhere as it is more of a fudge than an ice cream. I still ate it! I like fudge 🙂

Thanks Greg, I wanted an ingredients shot as it is an odd collection of ingredients for ice cream. I always add a 1970’s style filter to my ingredients shots…to make them a little retro 🙂

I’m not a fan of icecream and yearn for flavours other than chocolate. However this has me looking in my cupboards for condensed milk! The teens will love it.

I promise I will retest this and post again. I think there may be an error in the recipe as it is ‘so’ thick. I think less cornflour, less cooking and a little more milk may be in order. (Check the comments on Jo’s original post) I love condensed milk as an ingredient.

I tried the same recipe from A Cup of Jo last night and like the others who have tried it, ended up with a fudgy-consistency. I still love it and the fact that it needs no ice-cream maker (don’t have one, doubt I’ll ever want one). Next time I’m going to cut down the cornflour, increase the condensed milk. Reducing cooking time’s also a good idea.

Hello Claire – I’m sorry to read your first batch wasn’t a success. I’ve received similar comments to the original post on my blog and trying to find out what’s going wrong. All I can think of is the difference in the ingredients. Maybe Turkish cornstarch isn’t as strong as the ones sold in the US or UK? I’ve tried the recipe many times and have always achieved a creamy consistency. The photos I took, which were published on Cup of Jo, were taken right after I’ve taken the ice cream from the freezer. It never freezes solid. In fact, it was quite a challenge to get a shot with a solid scoop. Looking forward to your revised version.

I just made the same ice cream yday after stumbling upon the link on Cup of Jo. Same issue of fudge like consistency. Is there any way I can get a creamier texture; by adding more condensed milk and heating it up again and repeating the process of cooling and freezing?

Hi – I am not sure you can salvage what you have already got, but it’s worth a go…or you could roll it into balls and call it fudge! My revised recipe makes a much softer texture: https://thingswemake.wordpress.com/2012/03/03/mocha-fudge-ice-cream/
