We hope you all had a good Christmas and are relaxing in this strange lull before New Year.
Bubble and Squeak isn’t pretty, but it’s got to be done. It’s something that I avoided as a kid, but I now see as an essential part of Boxing Day and a great way to empty the fridge of the Christmas dinner leftovers.
I mentioned that Bubble and Squeak was a Christmas favourite of mine in the Brussel Sprout Tree post and someone asked what it was, so here, in all it’s leftover glory, is how we make it.

…and when I say ‘we’, I mean Ed. For some reason this is his speciality.
Chop up leftover roast potatoes, brussel sprouts, any bacon that you used to wrap the turkey and some chestnut stuffing. Also slice up half an onion.
Fry the onion and bacon in a pan for a while, then add the potatoes, stuffing, brussels and some seasoning.

Press it down in the pan to allow the base to get crusty and brown, then chop through the mixture with a fish slice several times and turn it over so it all gets toasted.

Serve with a fried egg and lots of tomato ketchup.

I’m crazy about bubble and squeak yet I didn’t make it this year due to lack of sprouts. Bubble and squeak isn’t the same without sprouts to me!! Love the top picture.

Oh very cool. My wife had this dish when she went to London. You don’t really see it in the states. Can’t wait to try it.
