Balls we make?
It’s getting out of hand, I realise.
I have leftovers, I can’t bear to waste them. I turn them into something spherical, roll them in panko crumbs and fry them.
It’s becoming a habit. But hey, I created dinner out of something that would have got thrown away.
Plus an 8 year old and a small dog went mad for them.
Shortly after this photo Ernie stole one out of George’s hands.
BAD dog.
I can’t profess to this being a recipe.
It is caused by a chain of events.
Yesterday we went to Birmingham. I ate too many spicy Wagamama noodles…
…too many Krispy Kreme Donuts and gave myself bellyache.
Therefore I didn’t eat my usual big momma portion of risotto so we had some left.
This much to be exact:
Looks a bit claggy when it’s cold doesn’t it?
I think it’s because this batch was made with an unctuous ultra chickeny stock which helped stick them together.
I just took golf balls sized balls of it, rolled it up and rolled it in seasoned flour.
Then beaten egg and panko crumbs. (bread crumbs would do)
Then, for the first time ever in my life I used a chip pan.
I salvaged this vintage item when my Mum moved out of her house.
I christened it today. I may never look back.
Spherical food.
It’s the future.

You gotta love a KK. Plain glazed are my fave. Selfridges sell panko but v expensive. My brother got me my last lot from a Chinese supermarket somewhere, not sure if it was in Derby or Liverpool. We use them to make Chicken Katsu.

These look so good! And your pictures look gorgeous! I’ve always wanted to make them but usually get too lazy to do so… Hahahahaha. By the way, the bread crumbs aren’t really japanese panko crumbs. They’re just regular korean brand bread crumbs~ I thought I should let you know just in case you have people in arms about what it is~~~

Ooh – is that what they are called? They are lovely and very easy. I think the thick stock helped though. If I had not used that I think they might need some breadcrumbs in the mix or something. Let me know if you give it a go.

Oooh! Yummy. My grandmother used to stuff the Arancini with cheese and a meat & pea stew. Then roll them in bread crumbs and fry them. I’ve been meaning to give them a try myself.
If I were to make a pot of risotto, especially in order to make them into balls, do you recommend putting the risotto in the refrigerator for a while so that it is more congealed and easier to work with?
