Weekend Breakfast

As a rule, breakfast with the Sutton’s is cereal or toast. At the Weekend all bets are off. I was all for the not-very-summery choice of porridge this morning. The Guernsey cream in the fridge was calling to me and asking to be poured on hot porridge with brown sugar.

George’s request won the day though. He wanted “Pancakes…but the little fat ones please, as you get less stressed when you make those, Mum”.

He refers to the fact that when I make crêpes I spend a lot of time slaving at the stove and not enough time enjoying them. I also invariably burn myself trying to stack them up and slot them into our tiny top oven to keep them warm.

American ‘fat pancakes’ are super quick though, plus today we had some fresh strawberries, raspberries and maple syrup too.

For a small batch of pancakes just mix together: 125g plain flour, 2 teaspoons of baking powder, 1 egg, 150mls of milk and a tablespoon of melted butter. Cook in a lightly oiled non stick pan and flip when the edges bubble. Today I had run out of baking powder, so I used self raising and it worked fine.

For those of you that know me you will not be surprised that we usually have these with crispy pancetta. Today to ensure our arteries were kept good and furry we made a double batch of pancakes and added some of that Guernsey cream…just after I took the healthy looking photographs.
