This Saturday was our first barbecue of the year. We had sausages from Uncle Jerry Howarth’s in Belper, freshly made chicken satay, grilled asparagus, salad leaves from the garden, caramelised peaches and spiced bananas with cream.
It really has been a fantastic week of weather and we certainly have made the most of it. A Weekend camping in the Peak, a great half term and another sun soaked Weekend to follow.
The garden is looking fantastic and we are enjoying the crops that are ready so far, especially the lettuces and rocket. In fact, what am I saying? They are the only crops we have just yet, but they are making up for it in quantity.
If you want to try the Satay, just mix 1 teaspoon each of Cumin, Coriander, Tumeric and salt plus 2 of brown sugar and 5 tablespoons of coconut milk.
Slice chicken breasts into thin strips, put on skewers and marinate for a few hours. Use the rest of the coconut milk to make a yummy peanut satay sauce. Let me know if you want the recipe for that too and I will post it.
