You may have noticed that I get into a bit of a groove with my recipes.
I had a phase where everything was ball shaped. Then I had a bit of a soufflé thing going on. Coconut and raspberry is what I am ‘down with’ at the moment.
This Soft Raspberry Coconut Ice from Dan Lepard tastes good, it’s pretty, easy to make and you don’t need to cook it.
It’s kind of retro too.
Making this for an after school treat was a good excuse to buy mascarpone and raspberries. It meant I could also concoct some layered desserts with crushed amaretti’s and Greek yoghurt. We’ve just eaten those, but we have a big plateful of these coconut treats to last until the Weekend.

It’s such a good collection of recipes that I already have a backlog of ones I want to try. I like the way that Dan explains why a particular ingredient or technique will give different results.
The science of baking fascinates me. I love altering and developing recipes to suit our tastes and how the more experience you have the more (successfully) experimental you can be.
Me and George are already pondering some different flavours for coconut ice. A green and white minty version is now on our ‘to do’ list.

This is my most used book at the moment – constantly open at the walnut and red wine loaf, with several visits to chocolate custard muffins. I agree that Dan’s explanations allow you to understand the recipe so put your own twist on it. Your coconut ice is beautiful.

Yowza, I love the sound of this! I’m not the biggest coconut fan, but I’d try it in this form. Very VERY intrigued about the minty version, too ……..
